Q. Can I eat Ghee, and still be Paleo?
A. I would say no. If the definition of Paleo is to eat what Paleolithic man would've ingested, I think its safe to say, he wasn't harvesting milk from livestock, churning it, then melting off the sugar and protein. However, if you would like to alter the question, we may have a "Reasonable Paleo Esq" item to look at.
First, I shutter by even saying Reasonable. To me, that sounds like justification. It looks like a murder trial where the guilty gets off because of a technicality. But in an effort to educate, and provide an alternative that may still work, we will address Ghee as a possible fat alternative.
We will only do this if we can realize the goal of the Paleo diet isn't to turn everything Paleo by way of manipulating items, or changing definitions. Bad is bad, Paleo is Paleo, and while Ghee is not, the occasional addition may not harm us in the least....but the list of foods like this is ever so short. If you start making excuses to fit all your favorites into now....just eat whatever the hell you want and don't taint a healthy program, or ruin a quality name.
Butter:
Butter is clearly dairy, made from churning fermented cream or milk. Thusly it contains lactose, proteins, water and fat. Sources come from cows, sheep, goats, yaks, elk, and even more crazy ones. Butter is a water-in-oil emulsion(a mixture of two or more unbendable liquids, which is one of the reason butter remains solid when frozen, but softens considerably at room temperature, and melts at body temperature.
Butter has a 350 degree smoke point, meaning if you use it when cooking it will begin to smoke if you go over the SP temp and degrade the food, and cause other harmful actions in the process.
Clearly....not your Paleo friend.
Clarified Butter:
Generally produced when butter is melted. The different components in the better separate as the temperature rises. When the milk solids separate after melting you can get the foam of the top, and take the layer of CB off the milk solids which are visible at the bottom.
CB will hold longer than butter, but still contains moisture and a small amount of components from its original version. CB also has a smoke point of 485, making it better for cooking.
Ghee:
Ghee is super close to Clarified Butter.The difference is only the cooking time. Ghee is completely cooked to have eliminated all milk solid, and all water, leaving only butterfat(simply the fat found in milk).
Eliminating the protein serves the purpose of eliminating the casein milk protein which is akin to a lighter grainish toxin, or anti-nutrient. This irritant may or may not show a problematic happening in all of us, but those suffering from auto-immune disorders, celiacs,crones, autism and the like will do well to invest in Ghee as opposed to regular butter. This simple protein found in milk is one of its biggest obstacles, and ghee eliminates it.
Galactose is another component found in milk PCF dislikes. First, even though there will be arguments, we generally don't absorb this product well, hence lactose intolerance. Of course not all of us are throwing up four seconds after we drink it, but its safe to say your allergic on some level. Any allergen makes it harder to process nutrients and recover, no matter how small the infraction. If your looking for top notch recovery....I would eliminate milk all together.
Since Ghee eliminates the offending agents, and leaves it a stand alone fat, almost void of irritant it can be a logical addition to a "Reasonable Paleo Esq." meal plan. A higher smoke point(485) makes it optimal for cooking, and the nutty flavor it attains from the process adds flavor.
Variety is the spice of life....fair. Justification is its opposite. Reasonable Paleo, is admittedly not "Paleo". Weighing and measuring your food with your eyes.....isn't a scale. Ghee is icing, not staple. Meats, nuts, seeds, green vegetables, no starch, no sugar is where we would should live. Ghee most likely does not hurt us, if we just visit on occasion.
